An Evening at Pablo’s Pizza

Nestled between local shops on Grand Junction’s Main Street lies Pablo’s Pizza. Even before you reach the pizzeria, spices and herbs make their way down the street and lead you by nose to the lovely shop. 

Once inside, the Italian aroma only intensifies. Numerous plants frame the window sills looking out on Main Street, which, during the holiday season, is an enchanting sight. Local art is displayed for decoration and for purchase on the brick walls. The cozy environment mixed with the lively music and soft lighting make for the perfect chill night out with friends. 

Grab a menu and pick from a plethora of pies suited for all dietary needs. I decided on Unicorn Force, the pizza for which Pablo’s is known. With an olive oil and garlic base, the pie is made with a thin layer of mozzarella, halved cherry tomatoes, and leaves of basil topped with pine nuts, salt and pepper. The whole thing is thrown in the oven and baked until perfect. With the gorgeous plate right in front of you, you can’t help feeling intoxicated.

The first bite is quite the experience. The crust is just thin enough to allow all of the flavors to make their way into the mouth of the lucky eater. The melted mozzarella strings from the pie to the lips. The tomatoes are incredibly sweet and are complemented by the sprinkling of salt. The pine nuts add a wonderful crunchy texture and powerful flavor, subtly reminding the eater of pesto. Chunks of garlic hidden under the baked mozzarella make for a lovely surprise. The soft, doughy center then finishes in a delightfully crunchy crust.

I sat at a table near the window as I enjoyed every bite. Between the lights outside and the tasty pizza inside, my night was made. Stop by Pablo’s for a low-key evening and a wide variety of mouth-watering pies.
