I decided to go with a combo of kale salad and a sandwich called the Sol Bird. The salad was delicious: a bed of hearty green kale topped with cool, crunchy cucumbers and tender artichoke hearts. In addition, bits of quinoa added a lovely bubbly texture and homemade croutons sealed the deal.

The sandwich was the main event. The Sol Bird includes roasted turkey and peppery arugula. To add some moisture and beautiful flavor, goat cheese and pesto smother both sides of whole grain bread. Topping the whole entrée off, sun-dried tomatoes bring in a pop of acidity and balance out the subtleness of the goat cheese.
